L'Abysse Dubaï opened at One & Only The Palm

Multi-Michelin-starred chef Yannick Alléno opened L’Abysse Dubai on 19 October 2026 at One&Only The Palm, bringing his distinctive interpretation of omakase to the Middle East for the first time. Following Paris, Monaco and Osaka, this intimate 34-seat restaurant brings together Japanese craftsmanship, the close connection between sushi master and guest, and Yannick Alléno’s Cuisine of Time, in a setting defined by precision, creativity and discovery.

‍

At L’Abysse Dubai, Yannick Alléno creates a dialogue between contemporary French gastronomy and the precision of Japanese omakase. Maturation, extraction and the mastery of time lie at the heart of the experience, revealing the full richness and depth of each ingredient’s flavours.

‍

‍

At the heart of the restaurant, a ten-seat counter invites guests to experience the culinary journey up close, as the sushi master prepares and presents each creation before them. The dining room offers a further 16 seats, while an eight-seat private dining room provides a more intimate experience.

‍

Designed by Laurence Bonnel and RoWin’atelier, the interiors offer a refined and immersive setting, where tactile materials, sculptural forms and carefully considered lighting create a distinctive atmosphere. Works by William Coggin, Célia Bertrand, Silver Sentimenti and Rino Claessens punctuate the space, establishing an artistic dialogue that echoes the precision of each gesture and the rhythm of the culinary experience.

‍

‍

The omakase unfolds across 13 sequences and five movements, conceived as an emotional journey rather than a simple succession of courses. Guests place their trust in sushi master Ken Ishihata, who guides them from delicate opening bites to Émotions, savoury compositions, followed by nigiri, a moment of transition and finally Amamis, the concluding sweet movement.

‍

‍

Among the creations are sea urchin with ginger mayonnaise, lightly grilled langoustine and an azuki bean and combawa millefeuille. Each dish is served at the precise moment when temperature, texture and flavour reach their perfect balance. Carefully curated pairings of wines, sakes, teas and infusions accompany this progression.

‍

This opening builds on the longstanding creative relationship between Yannick Alléno and One&Only The Palm, first established with STAY by Yannick Alléno, the resort’s two-Michelin-starred restaurant. With L’Abysse Dubai, the Chef introduces an entirely different culinary universe, rooted in the precision and excellence of Japanese craftsmanship.

‍

Reflecting on the vision behind L’Abysse Dubai, Yannick Alléno said:
“L’Abysse was born from my love for Japan and Japanese gastronomy. It all began in Paris, before continuing in Monaco and Osaka. Dubai was the natural choice for this next chapter, and One&Only The Palm has once again given us incredible creative freedom.

‍

Around this counter, we want to take our guests on a journey, surprise them and offer them a magical experience. Together, our teams have created something Dubai has never seen before. The result has exceeded everything I imagined, and I am incredibly proud.”

‍

‍

Open since 19 October 2026 at One&Only The Palm, L’Abysse Dubai marks a new chapter in Yannick Alléno’s international culinary journey, introducing the L’Abysse experience to Dubai for the first time.
