For Christmas 2026, Yannick Alléno places vanilla at the heart of his chocolate collection.
The Chef's favourite flavour, vanilla has held a central place in the Maison's repertoire since its creation, notably through the iconic Vanilla Pod, which has become one of its signature creations.
With Le Noël Vanille, Yannick Alléno takes his exploration of this exceptional spice further, revealing its many facets. Aerated praline, caramel, marshmallow and vanilla caviar showcase the diversity of its flavours and textures, in harmony with the depth of cocoa, the freshness of lime and the delicate balance of fleur de sel.
The collection unfolds within a winter wonderland inspired by the shapes and subtle hues of the vanilla pod. A brigade of Little Chefs brings this snow-covered world to life, accompanying the creations imagined for the festive season, from the Advent Calendar to the Vanilla Christmas Tree and the Dark Vanilla Chocolate Bar.
"Vanilla is a flavour that has been with me for as long as I can remember. It is to chocolate what salt is to cooking. For this collection, I wanted to approach it as a true gastronomic ingredient, revealing its different expressions and the richness of its pairings with chocolate. Its comforting notes also bring back childhood memories. To me, that is the essence of Christmas," says Yannick Alléno.

The Vanilla Pod: A Signature of the Maison
An emblematic creation of Chocolats de Yannick Alléno, the Vanilla Pod forms the natural thread running through this collection. Its distinctive silhouette, textures and aromatic intensity inspire the world of Le Noël Vanille and the new creations designed for the festive season.

The Advent Calendar: A Journey into Pavillon Ledoyen
For its 2026 Advent Calendar, the Maison reimagines Pavillon Ledoyen beneath a blanket of snow, brought to life by a brigade of Little Chefs preparing for the Christmas festivities.
Inspired by the enchanting world of fairy tales, the setting features magical vanilla pods and cocoa pods.
Inside, 25 compartments reveal 25 different chocolates, accompanying the coming-of-age story of a young chef guided by Yannick Alléno.

The Vanilla Christmas Tree: An Iconic Creation of the Collection
Inspired by a bundle of vanilla pods, the Vanilla Christmas Tree brings the collection's theme to life in a chocolate creation designed for sharing.
Beneath its dark chocolate shell lies an aerated vanilla praline, a delicate layer of milk chocolate and crunchy pieces of Breton shortbread.
The contrast between the melting softness of the praline and the crisp texture of the shortbread creates a delightful tasting experience.

The Dark Vanilla Chocolate Bar: A Symphony of Textures
With vanilla pods intertwined like vines, revealing their precious caviar, the Dark Vanilla Chocolate Bar explores the spice through both its sculptural design and its composition.
It combines dark chocolate, aerated vanilla praline, pieces of praline Breton shortbread, vanilla caramel made with Isigny cream, and marshmallow infused with lime zest.
A touch of fleur de sel brings balance and enhances the lingering flavours.

The Maison's Signature Creations for the Festive Season
Vanilla Sticks
Hand-painted, the Sticks combine a delicately crisp chocolate shell with a smooth, melting praline centre. For Christmas, they feature an exclusive vanilla recipe.
Marrons Chauds
Inspired by a cherished childhood memory of Yannick Alléno, the Marrons Chauds evoke chestnuts gathered in autumn and enjoyed during the heart of winter.
Their dark or milk chocolate shells encase a velvety chestnut cream and fresh chestnut paste, enhanced by the aromatic notes of tonka bean.
Intense Truffles
Inspired by a petit four served at the three-Michelin-starred Alléno Paris restaurant, the Intense Truffles reflect Yannick Alléno's expertise in flavour extraction and concentration.
Beneath a delicate dark chocolate shell lies an intensely flavoured honey ganache, finished with a dusting of cocoa powder.
Chocolate Gift Assortments
Designed for gifting or sharing during the festive season, the Maison's assortments bring together its signature creations in a variety of formats, including an elegant gift box of eight Vanilla Pods.
