Passing on to the younger generation
Supporting young talents, transmitting their know-how to them and raising them to the highest level of excellence, this is the mission that Chef Yannick Alléno has set himself.

To maintain the know-how of French cuisine, it is essential that we in turn transmit and pass the torch to the younger generations. At the Lyfe Institute in Lyon, the Chef created the Sauce School, whose courses make it possible to understand the principles and fundamentals of the French sauce tradition and to master new techniques such as extraction or cryo-concentration at the origin of the new generation of sauces, the origin of the new generation of sauces, the cement of Modern Cuisine, dear to Chef Alléno.
Create working conditions favorable to the training of talent
The Pavillon Ledoyen, the most starred independent establishment in the world, is similar to a real training center. Here, 27 different nationalities not only have the opportunity to work in the place's three Michelin-starred restaurants (Pavyllon, one star; L'Abysse, two stars; Alléno Paris, three stars), but also in all of the Group's restaurants, i.e. 16 addresses around the world.
From Monte Carlo to Seoul via Dubai and London, it is a real opportunity for young talents in the dining room, kitchen, pastry or sommelier, who wish to improve their skills under the guidance of Chef Yannick Alléno, through different types of restaurants.
Like Auguste Escoffier before him, Yannick Alléno was part of his time and initiated profound transformations in the organization of kitchens. At the Pavillon Ledoyen, he has thus set up a participatory schedule to promote the balance between professional and personal life of his employees.

Yannick Alléno : new Chef at 30 Montaigne, Dior's iconic address
Dior announces an unprecedented collaboration with Yannick Alléno, an emblematic figure of French gastronomy.
From September, he will take the helm of the Monsieur Dior restaurant at 30 Montaigne, along with La Pâtisserie – renamed “Le Jardin“ – and Le Café: three venues dedicated to the art of living, located in the townhouse that saw the birth of the Maison in 1946, which is still home to its historic ateliers.
