The Lyfe Institute, a French school of international reference for culinary arts, pastry, hotel and restaurant professions, and Yannick Alléno, multi-starred Chef, twice three stars in the MICHELIN Guide, are launching Pavyllon, a restaurant school by Yannick Alléno and the Lyfe LYON Institute. This new establishment reinforces the ambition of the historic partnership between Yannick Alléno and the Lyfe Institute based on a modern approach to cooking and the transmission of know-how to future generations - like the École de la Sauce created in 2021.
In advance of the evolutions and new challenges of the arts and crafts of the hotel and catering industry, the Pavyllon school restaurant replaces and transforms the historic restaurant “L'Institut” into a showcase of innovation and French-style excellence.
The opening of this restaurant, located on Place Bellecour in Lyon, is scheduled for the end of 2025.
Yannick Alléno, at the head of the Pavillon Ledoyen, the most Michelin-starred independent gastronomic establishment in the world, reaffirms his commitment to transmitting his reforming vision of cuisine and gastronomy to future actors and ambassadors of the profession.

Yannick Alléno’s Limited-Edition Yule Log at Pavillon Ledoyen
For this first edition, Chef Yannick Alléno and Pastry Chef Valentin Mille pay tribute to wood, an emblematic material of the holidays. Inspired by Yakisugi, the Japanese technique of charred wood, the Yule log features a deep black finish and a striking, sculptural aesthetic.
A true edible artwork, it celebrates nature, Japan, and artistry—three major sources of inspiration for Chef Alléno.
