Each masterclass takes place in the wine cellar of Pavillon Ledoyen, the most Michelin-starred independent establishment in the world, a confidential space usually closed to the public, housing over 1,000 references from the finest French and international vineyards.

1. The Alchemy of Flavours

When Extraction® Meets Wine

Discover how Extractions®, the signature technique of Chef Yannick Alléno, interact with wine. This guided tasting explores sauces and great crus, revealing how aromatic concentration and wine structure resonate with one another.
