Tablettes Terroirs' collection by Maison Alléno & Rivoire

According to UNESCO, terroir refers to “a defined geographical area shaped by a human community which, over the course of its history, has developed a set of distinctive cultural characteristics, knowledge, and practices, based on interactions between the natural environment and human activity.”

Fascinated by this cultural and artisanal heritage, multi-Michelin-starred Chef Yannick Alléno sought to combine it with his own culinary expertise to create a truly unique gastronomic experience. From this vision was born the “Tablettes Terroirs” Collection, conceived as a tribute to craftsmanship and to the aromatic complexity of the great crus and spirits that are the pride of our regions.

At the heart of this approach lies pairing – the art of harmonizing food and wine – which shapes the creative process behind Yannick Alléno’s 21 restaurants.

The Chef has imagined five creations inspired by some of France’s most emblematic appellations: Saint-Émilion, Champagne, Cognac, Chambertin, and Côtes de Provence.

Each terroir is expressed through a Gastronomic Tablet, conceived as a true crafted dessert that showcases Yannick Alléno’s mastery of sauces and his bold creativity.

“Chocolate is a raw ingredient that offers tremendous freedom in creation. As a chef, my work is above all about building alliances, finding the right balance of flavors and textures. This Collection was born from the desire to play with these pairings in order to tell the story of French wine terroirs in a new way and to pay tribute to them,” explains Chef Yannick Alléno.

The same attention to detail is reflected in the design of the Tablets, which evoke the soil layers unique to each terroir. “For the Champagne Tablet, for instance, you’ll find chalky strata,” adds the Chef.

Each tablet may be enjoyed on its own, like a dessert, or paired with a wine or spirit from the same terroir, offering a complete sensory experience.
