Fanny Perrot, director of the Alléno Paris*** restaurant, receives the 2024 Service Award by Le Chef Magazine

During the 38th edition of the Le Chef Trophies, on September 23, 2024, Fanny Perrot, elected by her peers, received the 2024 Service Award. At the three-star restaurant at the Pavillon Ledoyen, Alléno Paris, she develops with Chef Yannick Alléno the Table Concierge service.
Arriving in 2023 as director of Yannick Alléno's three-star restaurant, Alléno Paris (at the Pavillon Ledoyen), Fanny Perrot develops and embodies Table Concierge, which highlights room service by creating a privileged relationship with guests.
“A first phone call allows you to find out about when customers are coming and to collect as much information as possible to better understand their expectations (their tastes, the reason for their coming...). For the guests, it is also an opportunity to design their dinner and to be the actors in it.”, she specifies.
While writing the book “Everything has to change”, Chef Yannick Alléno has developed his vision of service and is designing the future of gourmet restaurants:
- Cooking at the service of taste : cooking is above all about taste. Each intervention, each gesture must contribute something more to the flavor of the dishes, to their enjoyment.
- Social discretion : installation of a sail system that unfolds between the tables. These panels by Montex, created by the artist Kostia, separate tables with delicacy and lightness and allow “social discretion” by offering a subtle balance between the intimate and the public sphere of a restaurant.
- Anticipation and personalization, with Table Conciergerie : orders are shared and millimetered according to the choices of the guests, which makes it possible to limit food waste as much as possible. The exchange with the guests beforehand is also a guarantee of more fluidity in the kitchen because dietary restrictions and menus are known in advance. Thanks to La Conciergerie de Table, it is now possible to open a bottle of wine beforehand so that it expresses its full potential during the tasting; to order the flowers desired by madam or sir; to prepare a dish or a dessert that is particularly important to them... To have, finally, all the attentions that will transport the guest into a universe of emotions, and leave him that “memorable imprint” dear to Chef Alléno.
La Conciergerie de Table, led by Fanny Perrot at Alléno Paris, thus allows teams to personalize the arrival of guests from start to finish, by putting people back at the center of exchanges.

Fanny PERROT Alléno Paris ***, Paris (75) Born into a family of breeders, Fanny established close links between land and gastronomy from an early age, which led her to enroll in the Lycée Hôtelier de Poligny. After a first internship at the Grand Hotel de Cala Rossa in Corsica, she accumulated experiences in renowned establishments such as the Hotel Au Coeur du Village in La Clusaz and the Château de Mercuès in Cahors. In 2017, she joined Yoann Conte**'s La Table as head of rank, where she quickly evolved to become room director. This stage marks a major turning point in his career, with recognition of his expertise by the Young Room Director Award at Gault & Millau 2019. Her career then led her to Cheval Blanc Courchevel, where she took up the challenge of a position as room manager in a three-star restaurant, under the direction of Yannick Alléno. After a summer season at L'Auberge de Montmin, she accepted a position at the Pavillon Ledoyen in Paris, where she was quickly promoted to room director. In this prestigious setting, it aspires to offer an exceptional and innovative customer experience.
