At STAY Paris, Yannick Alléno offers pure Frenchcuisine, both comforting and assuredly modern.
There is something for all ages and appetites in this space dedicated to fine dining and liberty, making this neighbourhood restaurant a place to return to every day
The cuisine is sophisticated and creative with iconic traditional French dishes radically reworked into modern versions adapted to the tastes of today’s food lovers. Everything is lighter, with more elegant tastes, and a painstaking attention to detail.
The elegant menu – deliberately oversized to evoke the large choice of dishes – features subtle yet rich gourmet recipes: generous salads, seasonal soups, prime cuts, beautiful peaches and Parisian pastries. Yannick Alléno also shares more personal dishes, such as his real steak-frites in the style of his grandmother, Zélie.
Pastries are the very expression of sweetness, and often a meal’s finishing touch. Which is why STAY gives them their own space.
In the Pastry Library, a magnificent open display cabinet in the restaurant, head pastry chefs exhibit their unique works of art. From behind their marble counter, they can interact, explain, advise and pass on their passion, and of course, put the finishing touches to their creations under the eyes of diners.
In the cabinet, surprise! Tarts. Like sweet constructions, designed in all different sizes and shapes, they are modern versions of iconic desserts: charlottes, galets, soufflé meringues, cakes, blancmange and soft fruit, all is there. Each dessert has its type of pastry – shortcrust, sugar paste, puff, chocolate, semolina, gluten-free – and each has its own look. With an eye for detail and style, raw products are single-mindedly transformed into desserts that are elegant, beautiful and devilishly delicious.
